COFFEE ICE CREAM

Coffee ice cream is a delicious treat on its own and a fantastic ingredient for coffee milkshakes, coffee cocktails and ice cream sundaes. This is how I make it. I hope you will like it.

INGREDIENTS
  • 18 ounces of water
  • 200 g of caster sugar
  • 18 ml heavy cream
  • 18 ml milk
  • 3 egg yolks
  • 4 g of Nescafe instant coffee kind
  • 1.5 ml coffee

HOW TO MAKE
  • Heat a saucepan of water to a water bath.
  • Make syrup with water and sugar in another pan.
  • Pour the syrup into a bowl from the water bath. Add cream, milk and mix well.
  • Add egg yolks and granulated instant coffee.
  • Mix until everything is dissolved.
  • Put the bowl over the simmering water and start the water bath.
  • Stir constantly until the cream thickens and sticks to the back of a spoon, about 10 minutes.
  • Sift and stir in coffee.
  • Refrigerate several hours.
  • Put in ice cream maker and ice form as directed by your device.
