FOR THE SORBET
- 500 gm pitted apricots
- 40 ml of wate r
- 400 gm of sugar
- 1 vanilla pod

FOR APRICOTS IN SYRUP
- 240 gm pitted apricots
- 125 gm of sugar
- 10 ml of water
- 300 g pitted apricots
- 113 g of sugar
- 15 ml of water
HOW TO MAKE
- In a saucepan, place the sugar, water and seeds from the vanilla pod. Heat to get a nice syrup, the mixture should boil at least 5 minutes.
- Put the apricots in the hot syrup for 10 minutes minimum.
- They stayed 30 minutes in my case.
- Mix everything very finely.
- Reserve in a bowl and let cool to room temperature and then cool.
- When it is cold, put the mixture into the bowl of your ice cream maker and freeze for about 30 minutes.
- If you do not have an ice cream maker whip your cream very cold to the robot for 15 to 20 minutes, it should not flake. I used this method before acquiring my maker, it works.
- Place the sorbet in an ice tray and freeze until use.
- It is best to wait 12 hours after freezing turbine before eating sherbet.
- Preparation of apricots in syrup
- In a saucepan heat made apricots, sugar and water for 15 to 20 minutes.
