PURPLE FIG SORBET





INGREDIENTS
  • 500gm fresh figs violets
  • 1/2 lemon juice
  • 50gm of sugar
  • 20 ml of water
  • 1 egg white
  • 1 packet of vanilla sugar


 DIRECTION
  • Start by washing the figs, cut into 4. 
  • In a saucepan pour the water 20ml, figs, "sugars" and half a lemon. 
  • Cook small fires twenty minutes. 
  • Once cooked, cool the direction.
  • Meanwhile the rise white until stiff and set aside to cool.
  • Once the direction is cooled, mix in a blender.
  • Put this mixture into the ice cream maker and churn to 15/20 minutes, remove when the consistency has thickened. 
  • Pour into a pan, add the egg white until stiff and stir gently to mix everything together and put in freezer for 2 hours. Excellent tasting.
