CHOCOLATE ICE CREAM



 
INGREDIENTS

  • 100 gm of dark chocolate
  • 50 ml of milk
  • 50 ml of cream
  • 250 gm of sugar
  • 1 vanilla pod
  • 8 egg yolks
  • 50 gm bitter cocoa
 


HOW TO MAKE

  • Put a bowl in the refrigerator.
  • Pour the milk and cream in a saucepan and add 150 g of sugar
  • and vanilla.
  • Mix , put on the heat and bring to a boil.
  • Immediately remove the pan from the heat, cover and let cool.
  • Remove the vanilla pod.
  • In a large bowl , beat the egg yolks with the remaining sugar until
  • the mixture whitens.
  • Add cocoa mixed with a little water and melted chocolate in a bainhusband
  • the mixture of milk and cream.
  • Pour in a thin stream this mixture over the egg yolks, stirring
  • gently.
  • Replace the preparation obtained in the pan over low heat and without
  • stirring constantly with a wooden spoon, allow to thicken
  • until it coats the back of a spoon.
  • Do not boil.
  • Remove from heat and strain through a sieve into the bowl from the refrigerator.
  • Let cool , stirring occasionally.
  • Place in an ice cream maker and let it.
