INGREDIENTS
FOR GOAT CHEESE ICE
- 200g fresh goat cheese type "Little Billy"
- 200ml milk
- 50ml cream
- 7 leaves of fresh basil
- salt and pepper
DIRECTION
- Relax the goat cheese with a whisk. Mix it with milk and cream. Season and add the basil. Pay without ice cream maker and churn for 15 minutes. Disposed of in a container and place in freezer for 2 hours minimum.
- Remove the ice 10 minutes before serving so it is more ontueuse.
FOR THE
TOMATO CARPACCIO
- 4 tomatoes, beef heart
- 4 tablespoons olive oil
- 16 basil leaves
- sea salt
- pepper
DIRECTION
- Wash the tomatoes and cut into very thin slices. Arrange roses in the plates and drizzle with olive oil. Sprinkle a few grains of sea saltand pepper. Add a few basil leaves, put a dollop of ice cream goat center of the plate and serve immediately (before it quickly melt!).
