CARPACCIO OF TOMATO AND GOAT CHEESE ICE





SERVE 4
INGREDIENTS
FOR GOAT CHEESE ICE

  • 200g fresh goat cheese type "Little Billy"   
  • 200ml milk   
  • 50ml cream   
  • 7 leaves of fresh basil   
  • salt and pepper   
 
DIRECTION
  • Relax the goat cheese with a whisk. Mix it with milk and cream. Season and add the basil. Pay without ice cream maker and churn for 15 minutes. Disposed of in a container and place in freezer for 2 hours minimum.
  • Remove the ice 10 minutes before serving so it is more ontueuse.

INGREDIENTS
FOR THE TOMATO CARPACCIO
  • 4 tomatoes, beef heart   
  • 4 tablespoons olive oil
  • 16 basil leaves       
  • sea salt  
  • pepper   

DIRECTION
  • Wash the tomatoes and cut into very thin slices. Arrange roses in the plates and drizzle with olive oil. Sprinkle a few grains of sea saltand pepper. Add a few basil leaves, put a dollop of ice cream goat center of the plate and serve immediately (before it quickly melt!).
